Tortilla Soup Recipe for Intermittent Fasting

This is my favorite Soup because I like a little spice. And I use 1/2 can of salsa instead of tomatoes.

Ingredients (Pictured)

  • 2 tablespoons olive oil

  • 1 onion chopped

  • 3 large cloves garlic minced

  • 1 teaspoon ground cumin

  • 1 teaspoon cayenne pepper

  • 1/2 teaspoon paprika

  • 1 teaspoon of basil

  • 1/2 can of your favorite salsa

  • 3 cups chicken broth

  • 1 cup corn

  • 3-4 cups of broccoli

  • 1 cucumber chopped

  • 4 stalks of celery chopped

  • Optional: 14.5 oz can black beans rinsed & drained, chicken, guacamole, cheese, sour cream as a topping

Instructions

  1. Heat olive oil In a large pot over medium heat. Add onion and garlic and cook until onion is softened.

  2. Add remaining ingredients and simmer 20 - 30 minutes.
